Tasting Notes
This extremely limited Pinot noir (only two barrels made) was produced with the original plantings of our estate vineyard that are over 40 years old. Rich raisin, dark cherries, and blackberries dominate an oaky, spicy background. The wine has a long rich finish that intermingles with the oak notes.
Vineyard Notes
Olson Vineyard is Torii Mor's Estate vineyard, located in the Dundee Hills appellation, and was initially planted in 1972. The south, southeast slope, along with the 825 foot average elevation, aid in this site's ability to ripen beautifully balanced Pinot Noir. The vineyard is planted with the Pinot noir clones of Pommard, Upright, Wadenswil, Dijon 667, and the Coury selection. The vineyard is LIVE certified. The fruit for this wine was sourced from the older part of the vineyard, with Pommard, Upright and Wadensvil clones.
Production Notes
The fruit was hand picked, sorted, destemmed then fermented in a 2.5 ton oak upright for 8 days before pressing. The warm fruit started fermenting with indigenous yeasts as soon as it was in the tank, without cold soak. The wine aged for over 17 months in French oak barrels, 46.51% new (Tonnellerie Billon), the remaining neutral oak.
