Tasting Notes
The 2021 “Eola-Amity Hills Select” aroma is displaying earthiness, with herbal-smoky notes, rich sweet dark cherries and herb spice and lavender notes. The flavors are rich of sweet dark cherries and dark chocolate, and both that keep on getting more intense in the aftertaste. The finish is very long, rich and sweet, displaying the sweet dark cherries, chocolate and blackberries. The mouth-feel is full, bright, soft and very rich. The texture is soft with rich sweet tannins. This wine will benefit from extended cellaring and can be decanted to be enjoyed today!
Vineyard Notes
The Eola-Amity Hills Select is made of 100% Varga Vineyards utilizing 8 different distinct clones. The 11 acre vineyard is planted with a variety of Pinot Noir clones to include: 777, 667, 115, 828, 943, Pommard, La Tache, Wadensvil, and Calera. The vineyards are planted facing south and south-west to ensure maximum degree days for optimal fruit ripening. This site consists of gently sloping land elevated between 450’ and 600’. The soil types are volcanic, with Nekia, Ritner and Jory series soils.
Production Notes
The 2021 growing season was hot and dry with wide swings in weather conditions. An abnormally cold period at the end of May and a relatively cool wet period around bloom resulted in lower yields. The heat in the summer included a 5-day stretch that averaged 103F highs and 92-day span with only .02 inches of rain. Through the dry vintage emerged fruit with very little disease pressure, full ripeness, deep concentration while retaining good acidity. All these factors culminated to produce wines that are exceptionally balanced exhibiting flavors of intense dark fruit, earthiness and minerality paired with floral and red fruit aromatics. Torii Mor’s harvest started on September 13th and finished on September 29th.
Winemaker Notes
The grapes were harvested on September 22. The grapes were fermented with three different yeast strains, RB2, BRG and RC 212 in small fermentors, punched down three times daily, pressed very gently, and racked to a variety of French oak barrels: 30% new French oak, 20% one year old, 20% two year old, the rest neutral oak. The barrels were racked in April then again in August when the blend was put together before returning to barrels for another 11 months.
